Eh, I always just grabbed a sharpie and went to town with a utility/sausage knife. Then fine tune with a paring knife. I still bought a few pumpkins, but mostly because I can't stand store bought pumpkin pie.

The real fun is throwing them off bridges to see how much of a mess you can make. I also tend to shove M80's into them with all the guts still in and a long fuse. Pumpkins blowing up is an awesome sight!
