What vegetables do you like?
What vegetables do you like? I know some folks are down on the veggies. I don't like preparing them, all the cutting, the occasional cooking, bleah. But there are actually a ton of them which I love to eat:
brussel sprouts
broccoli
butternut squash
spaghetti squash
asparagus
artichoke (Is that technically a fruit, despite being green?)
avocado (Is that technically a fruit, despite being green?)
carrots
spinach
romaine
radishes
parsnips
potatoes
celery
peas (ONLY raw; I loathe cooked peas.)
snow peas
string beans
green beans
cauliflower
yellow squash
summer squash
Now that I think of all this squash, is squash a fruit? I get fruits and veggies confused?
What types of vegetable matter do you enjoy?

Broccoli is a flower. As well as cauliflower.
It's easier to say which ones I don't like. It's Aubergine.
Right now I'm in a phase of cucumber (tzatziki) and tomatoes (boiled and mashed into home made pasta sauce).

It's quite nice roasted, marinaded, with olive oil, lots of garlic, roasted peppers, and onions. Mediterranians know how to make excellent eggplant. eeees deeelicioussss.

Majority of the vegetables I eat are Lettuce, Tomato, Corn, Carrots, Brocolli, Potato, Peas, Cucumber. Fresh or frozen, but canned veggies make me wanna puke!

The only veggie I don't like is onions. Unless they're in ring form.
I sometimes cook with onion, but I can't eat it say..on a burger or something. I love vegetables though, best in a super spicy curry.

As BF mentioned there is a way to make it good and delicious but I never mastered it so I just skip guying it.
There's is a really good mousaka dish that my mom does. Main ingredients are potatoes, eggplant and... and... how do you say meat cut to tiny pieces? That one anyway.
Other dish that tasted decent was eggplant sliced nicely and put into mixture of egg and wheat. And then fried. Plus spices of course.

I just love mushrooms. I got this olive oil with tartuffe which is better than orgasm when put into a good salad.

to clarify: avocado is a fruit; its grown on trees.
mother of all thistles, artichokes are neither fruit nor vegetable. they are flowers. cucumbers are also considered fruits, as are tomatoes.

I'll also stick with the veggies I hate for convinience. all the one's I like are allready on amelia's list.
tomatoes are not a fruit. that's like making shit a fruit. fruit is supposed to be sweet or sour.
I only eat tomato in sauce form, so it has to be pulverized. If it retains any solid mass, keep it away from me. I suppose that it has to do with an aversion to texture/consistency more than flavor, which largely informs the items on my list.
-Olives
-Anything pickled is disgusting
-Peppers, basically hot tomatoes. I love pepper flavor, and crushed red pepper is bomb, but you know the drill beyond that.
-lima beans. I really don't know what those are. maybe I've never even had them. they sound gross.
-Beets.
-Squash. it's like eating a piece of plastic.
-Eggplant. it's purple squash.
-Aparagus. it's Ok, but I never eat it. I consider it a weird looking green bean.
-carrots. don't really deserve to be on this list. But they are the veggie that I like the least that I actually eat. I wish I liked them more, I probably wouldn't be friggin blind.
-cooked spinach. in fact any of the leafy greens cooked suck.
That's really my biggest reason for hardly ever eating vegetables, you can't make anything out of them other than a salad. Like I love radish, but what the fuck are you supposed to do with it? you can't name three things that use radish, and one of them is pretty much just salad without the rest of the salad aka. just radish with dip.
So vegetables never feel like a meal. potato is the only thing that I consider to be real food.

Its actually just a weird texture issue with me. I've had it Fried, pickled, cooked, gumbo'd... I still wince a little at the texture. The same goes for eggplant... There's something odd about the texture that just makes me cringe.
I'm full of texture issues. ^_^

Same issues here... It just feels kind of like... uhm... cardbox?
But done properly and disguised well it can taste good. Eggplant that is.

never met a vegetable that i didnt like.call one today,think of a vegetable lonely at home.slimy okra is okra done wrong and the eggplant must first be soaked in cold salt water to taste delicious and not bitter.try it fried in batter and bread crumbs with tons of cheese baked in and you might find its purpose.the parsnip is the only veg that i have not discovered a good way to cook any ideas?

I like just about everything except brussel sprouts and cucumbers. I like celery ONLY in small amounts as part of a dish. I don't like lima beans, but in my mind and cooking they are a legume not a vegetable. I'm on the fence about cauliflower- I have always disliked it but I'm willing to give it another chance.
All you people who think eggplant is gross haven't had it done right. In fact, I think most people in the US do not cook vegetables in a proper and appetizing way.
Ubiquitress, try roasting parsnips in the oven so they get all carmelly. You can use a ricer to mash them like potatoes, too.

ahhh the parsnip roast or mash ok ill give it a shot .thanks for the tip.lima beans are good kept simple, as their flavor is light,try good old butter salt and pepper and dont overcook them or they are horrible.they are also good in 3 or 4 bean soup with salt pork or bacon .excellent for winter nights, very fortifying. also caulifloweris the sauces friend try indian curries with it ,it loves turmeric.

i <3 veggies, hate cooking. so i only eat them if i eat out XD
potatoes.... and cabbage. cabbage + potatoes = epic win. (i can see my german and irish heritage here...)
i don't think i can name an example vegetable matter i dislike other than things like lima beans and usually peas.

Roasting parsnips - drizzle with some honey first to get a golden crispy kinda affair going on.
I eat at lot of seaweed and pick wild mushrooms if I find any, and I'm allergic to watermelon. Used to like rhubarb and blueberries but now can't stand either of them.
In the kitchen as we speak (and yeah, not many are actually veggies): apples, pears, bananas, potatoes, carrots, peas, broccoli, one tomato (looking iffy), onions, cabbage, lettuce and a can of peaches. All buried under a heaving great mountain of dead animals.

I like just about all veggies, except fucking swiss chard.
If spinach ate a bunch of arsenic, fucked a pigeon corpse, and then took a big diarrhetic shit, you'd have swiss chard.
I seem to like green beans right now, prepared almost every way.
Celery, lemon, ginger juice is awesome.
Sauerkraut, kim chi, any variation there of.
