real soup thread. (not a bot)
soup, soup, soup. I love soup. my favorite is pasta fagioli, minestrone, and clam chowder. I also make a mean chicken & rice and spinach leek mushroom soup..... all entirely from scratch. its pretty cold here now, and its deffinetly soup weather. most of my favorite winter memories from childhood involve making a huge pot of soup with my mom, and then sharing it with the the neighborhood.
what is your favorite soup, and your favorite childhood winter memory?
ps: happy thanxgiving, y'all.

Re: real soup thread. (not a bot)
I'm partial to a really rich lobster bisque.

Re: real soup thread. (not a bot)
Oxtail and miso, probably, but minestrone is nice too. Very rarely bother with sea-life based soup so I don't have major preferences, but I do prefer my soups to be lumpy. If it looks like water and tastes like it looks, it's not soup.
Have never personally "made" a soup, nor therefore shared it with the nation; but all respect to you and your Mom for doing so. I'm pretty sure the natural habitat of the juvenile soup is the tin can, but then what do I know...
Childhood winter memory... getting lost in the snow for a day with a bunch of friends when i was about 8. Built stuff, dug holes, worried everyone, had a ball.

we survive on stews and soups through winter, its my comfort food and favorite thing to cook especially if i have the time to also make bread.

Re: real soup thread. (not a bot)
Ubiquitress is a Queen of soup. A lot of times in the winter we'll start out a pot roast in the crock pot with potatoes and carrots, various flavor inducing agents and moisture enhancers. We'll eat it first as a roast, then cube what's left of the meat, add some new potatoes and it becomes stew for a couple days.
Conversely, a good chicken stew from the crock pot on the third day becomes a pot pie. My wife is magic. I'm better at frying and sauteeing, but she's the soupmaster of the house. We got a big ham today. Ham and lentil and stuff later this week. Life is good.

Re: real soup thread. (not a bot)
I love tomato soup with a nice sandwich on sour dough.
-
Re: real soup thread. (not a bot)
I'm partial to pea soup for some reason.
I made mushroom soup from scratch once and it turned out OK, but then kind of sucked the next time I tried to make it. I'm not good at cooking.
I was eating some soup in bed a couple days ago and I spilled it, it sucked. My bed and me were soaked in soup and I had to jump up and yank off my clothes because they were burning the hell out of me.

Re: real soup thread. (not a bot)
I love soup. Mostly tomato, I love potato leek, beer cheese almost anything. Yum!

Re: real soup thread. (not a bot)
My mother used to make the most stunning chilli-stew type dish... It was just spicy enough to make a winter day amazing.
My favorite soups... I'm very fond of New England Clam Chowder, Split Pea Soup, Classic Tomato, and my random stews of doom (which always include random veggies from Last Year's garden, a roux, and whatever is in the fridge).

Re: real soup thread. (not a bot)
I make a delicious minestrone, with the ingredients varying seasonally. I like to make a green soup with Asian leafy greens, miso, sake, soy sauce, and sometimes dashi. A basic miso soup is always dependable. I make a good black bean and a good red pepper soup.
When I make soup, I like to freeze half of it for later.
Some of these soups sound delicious... Voltaire, will you share the recipe for your spinach leek mushroom soup?

Re: real soup thread. (not a bot)
I mostly have leek soup, chicken soup, and miso. In restaurants, I sometimes also get mushroom, ginger carrot, lobster bisque, crab bisque, and New England clam chowder.

sure. its really simple, but a bit time consuming, since I make my own chicken broth....
start with say about 15 cups water, and bring to a boil. throw in you chicken(2 legs 2 thighs) , including skin and bones, and boil until liquid is reduced by half. add water so its back to the original ammount and reduce by half again. strain the broth through a china cap, so you have a nice clear strong broth. in a large stock pot, throw your chopped leeks and a little garlic in with some butter , and sautee just till bright green. add your chicken stock and some water(like 2 cups or so, maybe three) . reduce liquid to taste. this will vary since home made stock is never the same twice. add your fresh spinach and mushrooms and cook 30 mins. salt to taste and serve if you wish, but I always wait till the next day;its better day two.
note: I like to use thyme and basil in this soup as well, but it really is open to interpretation; I like to mix it up. sage and rose mary works really well too with a bat leaf. add your hebs when you add your stock if they are dried, and in the last 30 mins with you spinach if they are fresh.

(consider above.. worry it may have something to do with contraception and decide a manservant's sock will suffice...)
..boil.. mix.. lose will to live... stir.. 30 mins... wait till the next day.. strain.. boil.. 30 mins.. garnish with a delicate sprig of fresh herbage and a winning smile...
Now I hope you appreciate that I could never in any way cast scorn on your amazing culinary skills as in any way time-consuming, but if I'm in the mood for soup, I prefer to think I can satisfy said cravings within, if it's not too much to ask, the same day. Maybe it's just me.

you can eat it the same day, I just like it the next day after all the flavors marry overnight in the fridge.

Re: real soup thread. (not a bot)
does anyone have a good recipe for butternut squash soup?
-
Re: real soup thread. (not a bot)
French Onion... nothing like burning the shit out of your mouth when you get through the croutons and cheese... which reminds me.. I have to redo the insulation in my house... Which would be better, American Cheddar or Gouda?

I don't have a blender of any kind, but I once saw this beautifully simple recipie for butternut squash soup. I don't have amounts or anything, but they cut the sqaush into chunks, and roasted them in the oven with olive-oil, salt, and a bit of pepper. On the stove was a heavy cream, a clump of garlic sliced in half horizontally, and I think some Cardamom, Nutmeg, maybe some cinnamon?
After the garlic 'infused' it was strained out, the squash was added, then blended up with a hand blender until it was all smooth.
