Most simple redneck way is:
Cover it in metal foil so it doesn't dry out. Put it in a owen on 150 degrees Celsius for an hour and then open a package and finish of with 225 degrees Celsius for like 5-10 min.... And no marinade.
You get a crispy and juicy chicken at the same time
I pull the bag out of the freezer, dump the contents into a baking pan, and bake it for around 20 some odd minutes. I also put some sauce packets in hot water to warm them up.
Depends on how I'm feeling that day.
If I'm up to actually COOKING, I normally either go w/ a crispy layer of crushed ritz crackers and bake it in a little bit of butter.
Or fry it up w/ flour and egg.
Every once in a while I just bake it on a broiler pan w/ some shredded cheddar on top.
If I'm lazy, I just buy the premade frozen fried chicken and either deep fry it or bake it (depending on how hungry I am as it takes like a freaking hour in the oven)
I like it a lot of ways. I love piccata, and I also like it marinated and then cooked in a saute pan. I make pretty great fried chicken, and I like to bake it whole too..... it really just depends.
LMAO like 5 out of 7 nights a week I have chicken for dinner.
One of my favorite is to pound chicken breast until it is about 1/4 or 1/2 inch thin then sprinkles salt and pepper on it. Fry minced garlic in olive oil and butter then mix it with cream cheese. Spread the cream cheese mix on the breast. Blanche spinach for about 30 seconds then shred them and put them over the cheese. Roll the breast up firmly so cheese mix won't leak out, pin it together by toothpick. Bake in oven at 350 for about 40 mins.
Also I like to chop up and fry chicken in minced garlic and ginger then remove it. Put in about 1/2 cup of chicken broth, mix in 1/4 cup of smooth peanut butter and 1/4 cup of crunch peanut butter or 1/2 cup of one kind. Add 1/3 cup of soy sauce, a TSP or so of chili paste, and few drops of sesame oil. Fry until the broth is almost gone. Add chickens and cooked noodle into it and mix it together then serve.
For those who don't like to fry... Pour three cups of coconut milk, a cup of water, three thin slices of galanga (or ginger and few drop of lime juice), bring to boil. Add a cup and half of chopped chicken breast, let boil for five mins. Add 3 TBSP of fish sauce, a stalk of chopped green onion, and 3 TBSP of lime juice. Let boil for a minute then remove from the stove. Mix in 1/4 cup of shredded mint leaf and two or three crushed hot pepper.

No, seriously I take skinless boneless chicken breast, or thigh, and toss it in an air tight container with a whole bottle of cheap ass hot sauce, like Frank's, or Durkree's. The key is Salt+Vinegar+Hot Pepper. I buy what's cheapest, although next week I think I'll splurge, and use a whole big bottle of Tabasco. I marinade this for 2-24 hours and then throw it on a rack inside a pan in the oven set to 400* for 30 minutes.
This week I used a super cheap brand called Louisiana Original Hot Sauce, and it came out TOO HOT!!! OW! HOT!!
I almost always try to keep this on hand because it's low fat protein that can be added to anything, salad, soup, beans whatever.
A variation on this that I like is to use plain yogurt, add a few drops of soy sauce, and hot sauce to taste, mix it up, and marinade the chicken in it for 36 hours. Works well for tough lean red meats too.
Oh yeah, I like adding Sriracha chili garlic paste to these too to give it garlic flavor.
I experiment with different hot sauces, and might make up my own one day, but the cheap salt-vinegar-hot pepper ones seem to work best.

3 ways both of are baked, chicken breast boneless
Parmesan Chicken
a little butter
dried bread crumbs
clove a garlic
grated Parmesan cheese
fresh parsley
and just hint of salt
mix herbs if you like..
Other way is some I came up with
Franks hot Wing sauce let the chicken marinate in that for about a day
Add some onion staws to top all, most like bread crumbs. its wonderful

teriyaki sauce marination. Soak cut chicken in the marination for a full day, then grill, basting with fresh teriyaki as it slowly cooks.
simple teriyaki recipe
1 cup kikoman soy sauce
1/2 cup water
1/4 cup brown sugar
3 tbs minced garlic(fresh if you can from clove)
1 tsp ginger
bring to boil and then mix
2 tbs corn starch with 1/4 cup water and add to sauce slowly with a wisk until it is the thickness you want
serve with a rice pilaf of your choice, and au-gratan Potatoes
and a white wine.

sometimes i make "chicken water" for dinner...that's chicken soup.. I just add all the mexican vegetables and it's actually pretty good

I just remembered a good recipe favored by Muslim's in Bosnia. Cut the whole chicken in pieces and add salt and peppar and put it on plate in the oven. Just before it's done make a bit denser mixture for pancakes and cover it again. You can use sour cream instead of milk for better taste.
Everything else is just your imagination. Couple good tips is parmesan and sea salt on top for taste. You can even boil some broccoli and cut it in smaller pieces and mix in it. Persillade is a good tip too. Serve after your taste. I personaly love mixture of sour cream or yoghurt with sheep cheese or even chevree if I have it around And don't forget garlic! But don't overdoe it!
